Hearths and steps can be polished. Steps will need to be stripped, hand trowelled and filled on the day of pour.
An edging tool is to be used on all external edges to help hold the stones in. Steps and hearths may have less exposure than the floor as these are completed by hand and often vibrated by the concreter.
